Abstract
Today more than ever, it is necessary to become aware of our actual food system in order to make a change starting from our cooking habits. Our food system is no longer sustainable and being open to new food solutions can make the difference. Edible bugs are one of the possible sustainable solutions because they are protein, rich of nutrients useful to our wellness and with a low impact on the environment thanks to the minimum resources utilization. Given their potential why don’t we get used to the idea of a bug in the dish?
